■“Incahuasi” means “House of the Incas” in Quechua. Currently, 514 farmers are members of the cooperative, which places a strong emphasis on quality control. As a result, the cooperative has established a system where plots are designated by variety, allowing it to ship coffee by variety despite being a cooperative.
■The cooperative has produced many Cup of Excellence (COE) award winners and is known throughout Peru as a cooperative with a strong focus on specialty coffee.
To ensure the number of defective beans falls below export standards, the beans are processed multiple times using state-of-the-art equipment. This special product is the result of that process, with the number of defects limited to between 0 and 5 points.
