■The Mantiqueira Mountains stretch across the states of São Paulo, Minas Gerais, and Rio de Janeiro, and their name means “a drop of rain” in the local language.
The Mantiqueira’s lush forests capture rainwater, giving rise to numerous springs. Blessed with rich soil and abundant water sources, this region is a rarity among Brazil’s coffee-producing areas.

■The Cocaribe Agricultural Cooperative is based in South Mantiqueira, at the foot of the Mantiqueira Mountains.
The farms, situated on slopes nestled among the mountains, experience significant temperature fluctuations between day and night—so much so that fog often settles in the mornings—making this land ideal for coffee cultivation.
The Mantiqueira Mountains are home to such rich soil that they are able to sustain a level of biodiversity so high that the region is called a “treasure trove of life,” second only to the Amazon.
In Japan, the nearby region of Carmo de Minas became famous first, but coffee from South Mantiqueira is a regular contender in the Cup of Excellence, having won awards every year since 2001—a total of 359 times.

■To improve quality, the Cocaribe Agricultural Cooperative invited Mr. Wellington—a Brazilian cupping champion and COE judge for various countries—to serve as the head of its export division.
Since Mr. Wellington’s arrival, the quality of the Cocaribe Agricultural Cooperative has made remarkable progress. He has guided farms that previously produced mostly commercial coffee, and has now increased the proportion of specialty coffee within the cooperative to over 80 percent.

■This cooperative is also committed to coffee research. After investigating varieties suited to the region, they confirmed that the “Yellow” variety retains more moisture and sweetness and matures over a longer period of time, and are now promoting this variety.
This product is also made from 100% Yellow Catuai.
As a result of these efforts, the Kokaribe Agricultural Cooperative has gained recognition as a producer of specialty coffee and has earned high praise from specialty coffee roasters in Europe and the United States.

■ It is characterized by a soft, sweet aroma, mild acidity, rich body, chocolate notes, and excellent balance.
